Cafe Rico (Eastland)
Green Chile

Ingredients:

      • 1 - 1 1/2 lb. lean diced pork
      • Enough lard or shortening to cook pork
      • Roasted, peeled and diced green chilies to equal 1 to 1 1/2 pounds. (canned chilies may be used)
      • 2 or more roasted, peeled and diced jalapenos (to your desire of heat)
      • 1 - 8 oz. can processed tomatoes
      • 3 T floor
      • 2 cloves of fresh garlic diced
      • 1 T salt or to taste

Preparation

In heavy pot cook diced pork in fat until pink is gone.

Drain most of the fat but leave enough to add flour and brown, stirring constantly. (Make sure flour is toasted, much the same concept as making gravy)

Add diced garlic and cook slightly.

Add green chilies and jalapenos along with about 2 to 3 cups of water and stir.

When liquid is about to boil, add tomatoes and bring to boil, stirring constantly.

Reduce heat and simmer to desired thickness.

Enjoy.
