Loin with Mushroom Gravy
Preheat over to
500 degrees
Have hot mesquite
fire or charcoal in a BBQ pit with lid open.
Rub tenderloin with
a mixture of equal parts salt, pepper, and granulated garlic.
Place
on hot fire and cook quickly until golden brown. Then
remove and place in pan.
Cover and place
in hot oven for 10-15 minutes.
Remove and let sit
for 15-20 minutes.
Slice and serve
with mushroom gravy.

Gravy
Mix
2 tablespoons cornstarch in 1/4 cup cold water. Add
to 1 1/2 cups of cool chicken broth or water.
Sauté sliced
fresh mushrooms in 1-2 tablespoons real butter.
When mushrooms are soft, stir
cornstarch mixture and add mushrooms.
Salt and pepper to taste.
Stir constantly until thickened...about
one minute.
