Swordfish Spiedini
Spano's Italian Restaurant
8oz Swordfish Steak
1Tblsp Basil Pesto
2 Garlic Cloves
Fresh Thyme
Fresh Oregano
8 Grape Tomatoes
4 oz Proscuitto Ham
2 Wooden Skewers Soaked In Water
Cut Skin Off Fish. Cut Into Uniform Cubes. In a bowl combine pesto,
chopped Garlic, thyme and oregano. Allow to marinate for atleast 2 hours in fridge.
Start with 1 tomato and continu to build the spiedini, alternating
between the tomatoes, fish, and proscuitto.
Place on a very hot grill, for atleast 5 minutes per side,
or until fish is cooked completely.
Serve on abed of rice as a meal or as an appetizer
