Spano's Italian Restaurant


Spaghetti with Arugula,


Grape Tomatoes, and Pine nuts
8 Grape Tomatoes
8oz cooked Spaghetti
1/2 cup fresh arugula
2 cloves garlic
pinch of red pepper flakes
salt pepper


Saute Garlic in oil until browning begins. Add tomatoes and saute on low heat until tomatoes start to crack and peel and turn soft. add red pepper at this time and cook for 2 more minutes. add pine nuts and arugula salt and pepper and toss. add pasta water if dry. This serves 1 but just double everything for 2.
